Sweetcorn is trending in the food industry, and shows no signs of slowing down. Everyone from chefs to home cooks have been experimenting with this nostalgic ingredient in their dishes, creating everything from salads and soups to just the classic corn on the cob. We are so excited about the sweetcorn trend in 2023 and what’s better is that you can make them Vegan! Check out our two favourite sweetcorn recipes:
Method:
- Cut off the bottom inch or so of a corn of the cob, then cut it in half lengthways. Slice each half into three ribs.
- Make your BBQ mix by mixing the cumin, coriander, smoked paprika, oregano and sugar. Season it with Salt and Pepper.
- Drizzle the corn on the cobs with Olive Oil and then cover them with the BBQ spice mix.
- Bake in the oven for 20 minutes at 190 degrees or until they are curled and crispy.
- Enjoy straight away with a dip of your choice!
Sweetcorn Fritters

Method:
- In a large bowl, mix the flour, baking powder, paprika, milk and an egg. Followed by the sweetcorn, chopped spring onions, chives, parsley, salt and pepper.
- Heat the oil in a frying pan on a medium heat.
- Drop 2 heaped tablespoons of the mixture into the pan and let sizzle. If you would like smaller fritters, only drop 1 tablespoon.
- After 2 minutes flip the fritters over. Cook for another 2 minutes. Thereafter, continue flipping every now and then till both sides are evenly brown.
- Once the fritters are done they should be a darker brown with crispy pieces of sweetcorn at the edges.
- Serve straightway with a dip of your choice! Enjoy!
