Severn & Wye Smokery is situated on the edge of the Royal Forest of Dean between two of England's most celebrated salmon rivers. They smoke only the highest quality salmon in an old-fashioned way. The award-winning Smokery supplies some of the country's top chefs and food halls. They list Selfridges, Harvey Nichols, Fortnum & Mason, Harrods, The Ritz, The Berkeley, Claridges, The Savoy, Wheelers of St James, Bibendum, to name a few. Production techniques and smoking processes are still very traditional. Grading, filleting, curing and cutting are still mostly done by hand. Oak wood is used for smoking to produce a unique distinctive taste.
