    To celebrate the launch of our new product, mixed wild mushrooms, we’re delving into the fungi world of mushrooms. With an estimated 3.8 million species of mushrooms, it certainly is a big world indeed!

    Those of you who have read our 2024 food trends blog will know that we’re predicting an increase in consumer interest on the health benefits they can get from food. Mushrooms are low in calories and fat but still contain great nutrients, with portobello mushrooms being particularly high in potassium. They also have anti-inflammatory properties, which can help reduce the risk of developing autoimmune and chronic diseases such as cancer.

    The meaty texture and umami flavour of mushrooms makes them the perfect star of your meat-free menus this year. More and more chefs are choosing mushrooms over plant-based meat alternatives, which can often be packed with ingredients and chemicals, whereas mushrooms are a more natural option for vegetarian and vegan dishes.

    Once you’ve ordered your mushrooms, you may be wondering what the best way to store them is. It’s best to store fresh mushrooms in a fridge, in something breathable. If you’re wanting to freeze your mushrooms, we’d recommend cooking them first! Mushrooms contain a high amount of water, which can lead to them turning soggy when frozen from fresh. However, cooking mushrooms before freezing reduces their water content and helps to maintain their texture.
