Seeing high quality, big orders go out is hugely satisfying. Hearing positive feedback from our customers is always nice too.

I have been a butcher since 1982 and started my own business in 1987. Seeing how the business has progressed and is now being taken forward by everyone at Pilgrim Foodservice has been incredible.

You can’t beat a good old-fashioned roast dinner with beef!

-          What is your favourite part of the job?

I find the variety of work really keeps me on my toes. Every day there is something new and interesting to do or learn.

I am proud to say I have served as a soldier in the army before joining the butchery.

Rack of Lamb with Dauphinoise.

-          What is your favourite part of the job?

I love everything about being a butcher. There is a great atmosphere and it is far less stressful than my previous jobs.

I used to be a head chef and have always enjoyed cooking.

-          What is your favourite meal?

A barbecue in summertime or a roast beef. I can’t decide!

-          What is your favourite part of the job?

I enjoy doing something I am good at. De-boning a carcass takes skill and I find this to be really rewarding.

I consider myself to be a bit of an outdoorsman. I am into all sorts of outdoor activities including skiing, cycling and going on the occasional fell walk.
